recipe: huevos rancheros

I adore Mexican food and this is no exception! INGREDIENTS - 1/2 red pepper (sliced and deseeded) - 1/2 yellow pepper (sliced and deseeded) - 1/2 green pepper (sliced and deseeded) - 1/2 white onion (sliced) - 1 clove of garlic (finely sliced) - 1/8 teaspoon ground paprika - 1 tin of whole tomatoes (squish the tomatoes with a sharp, knife or your hands) - 1 chilli (sliced and deseeded, if your prefer it to be less spicy) - 4 eggs - 1 tablespoon of olive oil - 4 tortillas - 35g grated cheese - juice of 1/4 lime - pinch of salt and pepper - foil to cover the pan STEPS 1. Add the oil to a medium pan over a medium heat. Add the peppers, onion, chilli, garlic and paprika and allow to cook until softened. If this sticks to the pan, add a little water to deglaze it. Add the tomatoes, season with salt and pepper and allow to simmer.

2. Crack the eggs into small bowls and make small wells in the tomato sauce. Tip the eggs into the wells and cover the pan with foil, allowing the steam to poach the eggs. This should take no more than 5 minutes so check them regularly

3. Heat the tortillas, either in the microwave or in a pan, and scoop the peppers, tomatoes and an egg into each one. Top with cheese and a squeeze of lime. You could also add chopped coriander (cilantro), jalapeños or hot sauce

Portion fix: 1 red, 2 green, 1 yellow and 1/2 a blue
