Winter is well and truly here, but I'm still clinging on to the vestiges of autumn with this delicious recipe Pumpkin Pie Chia Pudding by Shakeology
INGREDIENTS
2 cups unsweetened almond milk (or any other nut milk)
1 scoop Vanilla Shakeology
1 tablespoon pure maple syrup
¼ cup pumpkin puree
¼ cup chopped raw pecans, toasted
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 dash ground ginger
½ cup chia seeds
DIRECTIONS
Place almond milk, Shakeology, maple syrup, pumpkin, cinnamon, nutmeg, and ginger in blender; cover. Blend until smooth
Pour almond milk mixture into medium glass bowl. Add chia seeds; mix well.
Cover bowl; refrigerate for at least 4 hours or overnight, mixing after 2 hours.
Sprinkle evenly with pecans; serve immediately
Serves: 4 (¾ cup per serving)
Per person: ½ portion of carbs, 1 portion of healthy fat, and 1 portion of seeds
